Chocolate Protein Pancakes

2 scoops (26g) Pea or Whey Protein
1T Dutch Process Cocoa Powder
1/2t Baking Powder
1/2 Banana - ripe
1/2C Egg Whites
1/2t Vanilla Extract
Directions
- Preheat frying pan on stove to medium heat and spray with non-stick spray such as coconut oil spray.
- Mix dry ingredients - protein powder, cocoa powder, baking powder - in a bowl.
- In a separate bowl, mash the banana. Once well mashed, mix in egg whites and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until blended.
- Once blended, pour into the pre-heated pan and let cook until bubbles form on the surface and edges appear cooked. Flip the pancake over for a few more minutes to complete the cooking. Generally about 3 minutes.
- Remove the pancake from the pan and place on a plate for eating. Optionally, smear the top of the pancake with 1/2 t of almond butter for extra flavor.
Notes
- This can be made with either pea or whey protein powder. I use a flavorless pea protein powder which is why I add the cocoa. If you have a flavored protein powder you like, you can omit the cocoa powder if preferable.
- This recipe makes a yummy breakfast or even a delicious snack. I sometimes make it to eat for lunch!
